Lamb Bitsa

called Bitsa because there's bits of this and bits of that in it!


Serves 4

2 roughly chopped onions
2 cloves of garlic
2 teaspoons paprika
1lb diced lamb
1 roughly chopped red pepper
I 400g can chopped tomatoes
2 celery sticks
¼ shredded cabbage
198 ml Beef stock
2 tea spoons marmite
Salt and pepper

Put all the ingredients in the slow cooker for approximately 4 hours or until cooked.

Lamb Paprika

This is especially for Mr Meerkat.... You know who you are... now stop singing and stop moaning about lamb. Hahaha


Lamb Paprika
Serves 4
4 lean lamb steaks
1 chopped onion
142g very low fat fromage frais
2 level teaspoons paprika
chopped parsley to garnish


Marinade

1 table spoon dry white wine
½ level tea spoon artificial sweetener
salt & freshly ground pepper
1 table spoon lemon juice
½ level tea spoon dried thyme


1. Mix the marinade ingredients together and place in a dish with the lamb steaks.
Make sure the steaks are covered thoroughly and place in the fridge for 2 hours. Keep turning the steaks to make sure the marinade covers all the lamb.

2. Pre heat the oven to 190 or gas 5. Drain the steaks and place in an ovenproof dish. Top with the chopped onion, cover and cook for 1 hour.

3.Mix the fromage frais with the paprika and pour over the steaks. Cook for a further 15 minutes.

4. Garnish with the chopped parsley and serve with a selection of Free vegetables of your choice.
