Broccoli & Stilton Soup

Broccoli & Stilton Soup

4 heads of broccoli florets1 small onion finely sliced
1/2 clove garlic finely chopped
1 pint veg stock hot
100g stilton cheese50ml double cream


1. In a pan add a touch of butter and olive oil.
2.Saute the garlic and onion with out any colour
3. Add the broccoli and pour on the hot stock bring to a simmer and cook for 10 minutes
4. When ready blitz into a puree
5. Bring back to a pan add the stilton and simmer for 2 minutes until melted
6. Add more stock if necessary.

  1. For those doing the Slimming World diet.. the cream can be exchanged for very low fat fromage frais. and the Stilton used as sins!! lots of them.
